Beat the Summer Heat | Chilled Corn Soup

1We know that only a few weeks ago we spoke about our excitement regarding the start of spring. But let’s be honest, we will probably enjoy the warm weather for a week or so before we start to complain about the impending heat. Us humans are very difficult to please.

Sooner or later, you will probably find yourself at at least one outdoor even during the dog days of summer where your only concern is how to keep yourself hydrated. The line at the bar is too long to refresh yourself, so you head over to the food section. A cold soup catches your eye and you’re relieved to finally get some respite and regeneration. That is, until you take a sip and realize that it’s not chill at all, but lukewarm and unappetizing. You do your best not to spit it out and inconspicuously place the cup down and walk away. You slowly slump back over to the bar line, where you hold your head down in defeat.

In order to help you prepare for your upcoming summer events, we’ve whipped up a batch of chilled corn soup which is topped with bacon, goat cheese and scallions. The soup will be a guaranteed hit at any party and won’t require a lot of time and investment and energy on your part. Could you ask for anything more? We didn’t think so.

Chilled Corn Soup – Recipe adapted from Bon Appetit

Makes 20 Double Wall Short Mini Glasses

  • 45 g. butter
  • 2 tbsp olive oil
  • 1 large onion, roughly chopped
  • 1 garlic clove, finely chopped
  • 6 cups corn kernels
  • salt and pepper to taste
  • 5 cups of water
  • 2 thyme sprigs
  • 3 oz. cooked bacon, chopped
  • 2 oz. goat cheese
  • 5 scallions, thinly sliced (white and light green parts only)
  1. Heat the butter and olive in a heavy bottom pot over med-high heat. Add the onion and garlic until fragrant and the onions become translucent and slightly colored (about 5 minutes).
  2. Add the corn to the pot and season with salt and pepper to taste. Stir in the corn until it begins to soften and begins to brown (about 10 minutes)
  3. Add the thyme sprigs and  5 cups of water to the pot and bring to a boil. Reduce to a simmer and cook until the corn is very soft (about 8 minutes). Discard the thyme sprigs
  4. Using a blender, puree the corn mixture until smooth. Depending on the size of your blender, you may need to do this in batches. An immersion blender can also be used. Strain the mixture through a fine-mesh sieve into a large bowl. Discard the leftover solids.
  5. Cover and refrigerate the bowl until cold (about 2 hours).
  6. Top the soup with several bacon pieces, crumbled goat cheese and a teaspoon of scallions.
